Phil Vickery brought us all a wonderful summer pudding today using delicious British strawberries.

Strawberry ice cream

Ingredients
250g unrefined caster sugar
150ml cold water
8 medium egg yolks
1 pint double cream (575mls), very lightly whipped
English 250g strawberries, chopped finely
2 tablespoons strawberry jam
100ml strawberry or raspberry

Method
- Place the sugar and water in a saucepan and bring to a boil
- Once boiling, boil for 5 minutes, bang, no less - Phil uses a small digital timer
- Put the egg yolks in a mixing bowl, and once the sugar and water were boiling for 2 minutes, turn the machine on medium speed
- 5 minutes, take the sugar and water on the stove, turn the machine at full speed, and pour over the egg yolks
- Whisk until thick, fluffy and cold
- Mix chopped strawberries with jam and liqueur
- Remove the egg yolk mixture to the machine, scrape the whip
- Add the strawberry puree and mix through, do not overwork
- Add the whipped cream, then freezing at night
- Serve in cones, the interior painted with white chocolate, then chilled

Strawberry Ice Cream

1 pt. pureed strawberries

1 C. sugar

1 large egg

1 C. half ½

1 cup vanilla

C. 3 heavy cream

Puree strawberries in blender. Pour into a mixing bowl. Add sugar, egg and half and half mixture and stir until sugar is dissolved. Add strawberries.

Add vanilla and cream. Whisk it in and mix well. Chill thoroughly.

Freeze according to manufacturer's instructions.

Give a little more than 1 quart.

1 cup sugar, divided

2 tablespoons all-purpose flour

Pinch of salt

the 1 / 2 cup milk

2 eggs, lightly beaten

the 1 / 2 cup soft or pureed fresh strawberries

1 1 / 2 cups whipping cream

L 1 / 2 c. tsp vanilla extract

1 teaspoon almond extract

Mix sugar 3 / 4 cup flour and salt and set aside.

Scald milk in top of double boiler, add a small amount of milk to sugar mixture, stirring until smooth. Stir sugar mixture into the remaining milk and cook, stirring constantly, until thickened. Cover and cook 10 minutes.

Stir a small amount of hot mixture into eggs. Stir the eggs into the remaining hot mixture and cook, stirring constantly minute L,. Cool.

Combine strawberries, 1 / 4 cup sugar, whipping cream and flavorings; incorporate custard. Pour into a container of ice cream freezer electric or 2-quart hand-turned, the gel according to manufacturer's instructions.
